Dr. Maria Laura Corollaro from Perfetti Van Melle will talk about chewing gums and candies, by describing:

  • their manufacturing process
  • the parameters affecting their texture properties and
  • how the texture can be measured through sensory evaluation"

Dr. Maria Laura Corollaro got her PhD in Sensory Science through a collaboration between Fondazione Edmund Mach and Università di Bologna, and is now Coordinator for the Sensory Activities worldwide in Perfetti Van Melle".
